This is the ice cream I promised in my last newsletter, and I was fortunate enough to share it over at Empowered Sustenance! Have you read Lauren’s blog? WHO AM I KIDDING. Of course you have!
So this ice cream is green, minty and smooth with “chocolatey” little bits of crunchy chip goodness. What I just did there was describe any good, classic mint chocolate chip ice cream, just to let you know that it DOES taste like the mint ice cream you know, love and miss. It does, it does!!
This ones a little better though (because I made it, duh! – But thats a joke. Kidding, I’m kidding) because it’s heathy, its 100% dairy free and vegan (just sub out the honey for maple syrup if that floats your boat) AND it’s Autoimmune paleo friendly (AIP) thanks to these little morsels of carob heaven.

I have discovered my new very favorite chocolate chip replacement in the form of coconut butter and carob. They’re heavenly, and they work magic in this recipe to bring the full effect of mint “chocolate chip” ice cream.
