Breakfast Stacks! A perfectly fried egg, spiced pork sausage, creamy mashed avocado and crisp sweet potato hash browns with a soft center … I think I died and went to breakfast heaven.
I’m a savory breakfast kind of gal. Fruit smoothies and banana pancakes? Not my everyday thing. I prefer eggs, a little meat and lots of vegetables to start my day.
This recipe is inspired by all of my breakfast favorites, stacked high into one beautiful, delicious and satisfying stack! I could eat this everyday, and for every meal of the day. Breakfast, brunch, lunch, second lunch (don’t deny it), dinner… anytime!
What makes this meal oh-so-special is that little gem on the bottom of the stack. The sweet potato hash browns pan-fry in glorious ghee and finish in the oven, giving them an irresistible crispy outside and a soft, satisfying center. It’s to die for, my friends.
