I’m a college student who’s in love with all things food and healthy living. I spend a lot of time creating new recipes in the kitchen (mostly paleo and always grain-free!), practicing food photography, collecting cookbooks, binge watching netflix series (and then rewatching all my favorites. Read: Gilmore Girls), reading books and listening to podcasts about anything and everything.
My obsession with food blogs and cookbooks inspired me to begin blogging in 2014, and I couldn’t love it more! I post recipes that are grain free, paleo and simple to follow because that’s how I eat everyday.
My real food journey began after being diagnosed with POTs syndrome (Postural Orthostatic Tachycardia Syndome). At the age of 17, I had to be pulled from public school because I was dealing with dizziness, fatigue, heart palpitations, extreme stomach pain, migraines, nausea and chronic pain. I was having a hard time staying awake or leaving the house, when before I was an active teenager who played volleyball year round.
My diagnosis meant some answers, but also the knowledge that there was no cure for what I had. Maybe I’ll grow out of it one day, but maybe I won’t. I had already begun to change my diet at this point (gluten and dairy free for about a year), but in an effort to heal myself, I transitioned to a completely grain free diet and focused on consuming real foods and slowly increased my ability to exercise.
Soon after, I started this little blog to share my healthy, easy to make recipes and to show others that real food is anything but boring!
How am I doing now?
Switching to a grain free diet has cured my migraines and leaky gut. I am able to eat without unbearable pain afterward, and my exercise tolerance has increased. I am able to do so much more than I was before!
Really, I’m just trying to experience life and cook good food.
